My Daughter’s Favorite 

Like a lot of parents, I pay close attention to the foods my daughter actually gets excited about. Maury has always had her own preferences. She isn’t much of a fan of animal protein, but she loves vegetables, so it became clear that if she was going to have a sandwich on the menu, it would be the vegetarian option. It was a perfect fit.

 She especially loves zucchini cakes and crisp red bell peppers. Those flavors and textures inspired the sandwich, eventually leading me to swap in crispy eggplant for a version that worked even better between two pieces of bread.

As I watched her gravitate toward those ingredients, I started thinking about how I could turn some of her favorites into a sandwich that was both delicious and something I’d proudly serve on our menu. After a few tweaks and a few creative touches of my own, That’s-a-Maury was born.
